How was biryani invented?

The root word of this dish comes from the Persian word biryan that means “to roast.” Therefore, it is believed that this dish has traveled from Iran. But, there is a second theory.

According to the book Pakistan Heritage Cuisine, Empress Nur Jehan, the wife of Mughal Jahangir, invented biryani by layering rice with thick, meaty gravy. The dish was created as a meal for the soldiers as it contains a good balance of proteins, carbs, and fats. (Plus, being a soldier is not easy. You exercise for hours almost daily!)
